When I think of strudel, I think of the Sound of Music. The two have been intertwined ever since Julie Andrews sang about crisp apple strudel, one of her favorite things, after cream colored ponies and before door bells and sleigh bells. A few weekends ago D and I went apple-picking (you’d be surprised how long it takes a two person household to eat a peck of apples) and apple strudel seemed like the perfect way to deliver the killing blow to our remaining apple supply. After
pouring over recipies some Googleing I was confident I’d found the easiest route to strudeltown so I dug out my Sound of Music record, defrosted some puff pastry sheets and got to baking.
I used this recipe for my first strudel attempt but deviated quite a bit. I used a third of the amount of sugar the recipe called for, added walnuts to appease D and cooked the filling down in a saute pan, over low heat for a few minutes before wrapping it up in my defrosted puff pastry. After all the changes I’d made I was surprised how well my strudel turned out. It was a bit
overstuffed rounder than it should have been but thoroughly delicious, and definitely one of my new favorite things.
